Sweet bakery products are the #1 category where European consumers would like to see healthier versions, according to consumer surveys by Innova Market Insights.1 With our own consumer research showing protein as the emerging hero ingredient due to its health associations,2 the opportunities in better-for-you bakery solutions were clear.

We set out to develop an ingredient that could achieve high protein levels across a wide range of sweet bakery products without the impacts on texture and taste so common with commodity proteins. We are excited to launch OvenPro® Sweet Goods, a truly game-changing solution for the baking industry.

Our team was excited to speak at FIE and share the science behind our new OvenPro® Sweet Goods and its ability to create cookies, brownies, and more, with a healthier nutrition profile that maintains the sensory enjoyment consumers expect. FIE is the foremost global trade show for food ingredients and brought together more than 25,000 industry professionals from 135 countries to explore the latest trends and ingredients.

Besides showcasing OvenPro® Sweet Goods prototypes at our booth (and in the New Product Zone), we had the opportunity to present on the future of bakery, including the role of high protein bakery in addressing consumers’ demand for better-for-you bakery solutions and the unique features of OvenPro® to meet this demand. Consumer Insights: Better-for-You Bakery Drives Permissibility

Looking at sweet snacking behavior, we see consumer needs evolving. In the UK, for example, consumption of packaged sweet snacks has increased to 6.2 times per week (about once a day).3 At the same time, nearly half (47%) of consumers are using diet and nutrition to actively manage their health and wellbeing4.

We see many consumers reaching for the better-for-you bakery option when it’s available. In addition, our research shows a higher consumption frequency for better-for-you bakery products compared to traditional bakery products,5 indicating healthier positioning drives permissibility.

Demand for protein has expanded beyond the gym to relax and unwind occasions, with great taste the single most important attribute of a protein snack.6 However, for non-users, taste is also the biggest barrier (stemming from the perception of poor taste and actual poor taste experiences). 7
